"So here's how I wash dishes," said Larry Radford, as he walked into the tasting room's back room.
"I bring them in here."
Radford showed how he has cleaned the wine and cider glasses at his Flying Dreams Winery
for the past seven years.
"And then I put them in my Hobart commercial dishwasher," he added.

And that's no barrel of laughs.
"Do you think it's a money grab?" he was asked.
"It's a little like extortion, if you ask me," he said.

Eleven tasting rooms in Woodinville, Redmond and North Bend have been cited for not having the proper permits. That means they must serve wine in disposable plastic or in glasses they give away.
"We were aware of a large number of wineries that were working without permits," said Becky Elias, who oversees food permitting, "nearly 150 of them."
Elias says public health has worked for two years to bring the tasting rooms into compliance.
"Many of these sites either don't have the right dishwasher set up yet," she said. "Or they also don't have the waste water removal infrastructure that they need to manage that kind of water coming off their business."
Larry Scrivanich owns this property that is home to two tasting rooms.
"For eight years, they didn't care," he said. "All of a sudden, it's urgent. It's got to be done now."
He says they want to do the right thing.
"But just not yet?" he was asked.
"As soon as we can," he said. "As soon as I get a permit approved by the health department for a new drain field, I'll hire a guy to put it in.
And I'm done."
Even Leroy Radford at Flying Dreams says he will likely relent.
He doesn't want to serve his wine and cider in plastic.
So he'll probably pay.
But he says he won't like it.
